The name derives from the Turkish word ‘goz’ meaning ‘compartment’, in reference to the pocket of dough in which the various toppings are sealed and cooked. The Origin of Gozleme date back thousands of years in Turkey. It’s an ideal street snack. Back home in Turkey, its common to see Gozleme vendors, Often older women sitting in the markets and shop windows rolling their dough on large round wooden boards.
